
A recipe asks for one tablespoon, and the rest of the tomato paste starts its slow journey toward the back of the refrigerator. A little planning at the first use prevents that familiar ending.
If you use paste frequently, a resealable tube may fit your habits better than a large tin. Follow its refrigeration and after-opening instructions. With a tin, transfer unused paste to a suitable clean container and label it.
Freezing small portions is useful when the product permits it. Space spoonfuls on a freezer-safe surface or use a suitable tray, then pack the frozen portions into a labeled container. They can go into a hot sauce later. Freezing is a storage choice for food still in good condition; it does not reset a paste that has already been neglected.
