A dinner assembled from soup and toast

Give the toast its own topping so the meal offers more than one texture.

A bowl of soup and a piece of plain bread can be enough. When it feels a little unfinished, changing the toast is often easier than making the soup more complicated.

Start with a vegetable or bean soup you already have. Reheat it thoroughly, stirring so the center and edges become equally hot. While it heats, toast thick slices of vegan bread until the surface is crisp enough to carry a topping.

Choose one clear addition: roughly mashed white beans with lemon, sautéed mushrooms, or hummus with chopped parsley. Keep the topping fairly dry so the toast can sit beside the soup for a moment without collapsing.

Serve the toast on a separate small plate if you want to preserve its crunch, or place it across the bowl immediately before eating. There is no need to turn every leftover into a new recipe. Sometimes a fresh texture and a clean bowl are the most useful changes you can make.
