Choose two or three dishes and build a list around their shared ingredients. Buy one suitable plant milk, a small amount of tofu if you want to try it, and beans or lentils you know how you will use. Keep familiar vegetables in the plan.
Leave specialist ingredients until a recipe gives them a clear role. You do not need a large jar of something simply because it appears in a pantry photograph.
At home, put the recipes and ingredients where you will see them. The success of the shopping trip is a meal you make and enjoy, not the number of labels on the receipt that say plant-based.
